My brother took such a course 2 years ago in Phuket. He hasn't used his skills professionally, still he makes the best Thai I ever had :) If I'm not wrong, he went to this school called Pum Thai Cooking School, and for about 4000 B he spent 6 hours learning the techniques of the Thai chefs. He said it was worth it.
